DELICIOUS ROASTED CHICKEN 
1 whole fryer or roasting chicken (do not cut up)
1 whole garlic clove
1 small onion
1 lemon
olive oil (or any type of oil you prefer)
salt and pepper, to taste
4 cups water

Preheat oven to 425°F. Clean chicken by rinsing with water, remove insides and twist off neck and discard.C hop garlic clove, onion, and lemon in half.

Season inside of chicken with salt and pepper and place garlic, onion and lemon inside chicken. Place chicken breast side up in roasting pan and rub skin with oil. Salt and pepper outside of chicken generously. Pour 4 cups of water into roasting pan. Do not cover roasting pan.

Roast chicken for 1 1/2 hours at 425°F, basting every 30 minutes. Add more water during roasting time as needed if water evaporates too quickly.

Serve with hot pasta or rice.

Variation: Can add a can of cream of mushroom soup during last 30 minutes and/or stuff chicken prior to roasting with Stove-Top cornbread stuffing.

Instead of stove top stuffing why not make a real stuffing with dry bread, onions, celery and butter or marg and the seasonings of parsley, rosemary, sage and thyme or use poultry seasoning that is in a jar sold in the store. A little water can be added to the fry pan when all the onions and celery are done and before adding to the bread. Much preferred and tastier.
