SCALLOPED CARROTS 
3 c. cooked and mashed carrots
3 tbsp. finely chopped onions
1 c. grated Velveeta cheese
1 c. whipping cream (found in dairy case) or may substitute
Milk or half and half
12 to 16 crackers finely crushed

Mix carrots, onions, cheese and cream. Add cracker crumbs and salt to taste. Bake at 325 degrees for 35 minutes or more.
