CREOLE SAUCE 
2 tbsp. chopped onions
4 tbsp. chopped green peppers
2 tbsp. butter
2 lg. tomatoes, chopped or 2 c. canned tomatoes
1 c. undiluted canned consomme or homemade beef stock
1/4 c. dry sherry

Saute onions and peppers in butter for 5 minutes or until lightly browned. Add tomatoes, consomme and sherry. Excellent topper for meat loaf.
