EASY LEMON PIE 
GRAHAM CRACKER PIE CRUST:

1 1/4 c. crushed graham crackers
2 tbsp. sugar
1/4 c. melted butter

Mix well and press into 8 inch pie pan. Bake at 350 degrees for 8 to 10 minutes.

PIE FILLING:

In mixing bowl, beat:

1 (14 oz.) can Eagle brand sweetened condensed milk
2 egg yolks
Juice of 3 lemons to equal 1/2 c. juice
1 tsp. lemon peel
Yellow food coloring, optional

Pour into crust. Bake 30 minutes at 325 degrees (optional). May top with meringue: 2 egg whites, beaten; add 1/4 cup sugar and beat until stiff peaks form

Spread over pie and bake until golden. Or top with whipped cream. Chill well before serving.
