ZUCCHINI NUT MUFFINS 
3 c. flour
1/2 c. wheat germ
1/4 c. bran
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. nutmeg
2 c. sugar
2 c. grated zucchini
4 eggs
1 c. oil
1 tsp. vanilla
1 sm. can pineapple bits, drain
1/2 c. raisins
1 c. nuts
1/2 bag chocolate chips

Mix together eggs, oil and vanilla. Sift dry ingredients together with fork. Add to bowl. Add grated zucchini, pineapple, raisins, nuts and chocolate chips. Line muffin tin with paper cup liners. Fill muffin cup 1/2 full. Bake at 350 degrees for about 25 minutes, until lightly browned on top. Makes about 32 muffins.
