SHRIMP - RICE SALAD 
3 c. cool, cooked rice
1/2 c. finely chopped onion
1/2 c. finely chopped celery
1/2 c. finely chopped bell pepper
1/2 jar sweet pickle relish
1 tsp. salt
Pepper
Accent
1 c. mayonnaise
4 hard cooked eggs, chopped
1 pkg. cooked shrimp
1 tsp. sugar

Blend all ingredients thoroughly. Serve on lettuce leaves. Makes 6 or more generous servings. May substitute shrimp for crab.
