SHRIMP AND RICE SALAD 
1 c. cooked shrimp
3 c. cooked rice
1/4 c. diced celery
1/4 c. chopped onion
1/4 c. chopped olives
1/4 c. chopped bell pepper
1/2 tsp. salt
1/2 tsp. pepper
3 tsp. mayonnaise
Tomato wedges

Combine the first six ingredients in a bowl and mix well. Cover and chill until ready to use. Before serving, blend salt, pepper and mayonnaise. Add to other ingredients and toss to mix well. Garnish with tomato wedges and serve with French dressing.
