SWEDISH RICE PUDDING 
2 1/2 c. whole milk
1/2 c. raw whole grain rice
1/2 c. sugar
1/2 tsp. salt
3 eggs
1/2 c. milk
3 tbsp. sugar
1 tsp. vanilla
Pinch of cinnamon

Cook first four ingredients in double boiler, stirring once in a while until done. (Replacing the water in the bottom of the boiler may be necessary.)

When rice is done, beat yolks of three eggs with 1/2 cup milk. Stir slowly into rice and allow to thicken. Then beat the three whites stiff. Add 3 tablespoons sugar and 1 teaspoon vanilla. Fold 2 or 3 tablespoons of this into rice, reserving the rest for topping the rice. Put into a buttered baking dish. Shake cinnamon on top for garnish and place in oven to brown at 425 degrees.
