SAUSAGE - ONION - APPLE
CASSEROLE
 
3 lg. onions
3 lg. apples
1 lb. bulk sausage
3/4 c. herb seasoned croutons
1/3 c. firmly packed brown sugar
1 tsp. salt
1/2 tsp. nutmeg
2 tbsp. lemon juice

Clean and cut onions into 1/4 inch slices. Cover with boiling water and gently boil for 5 minutes; drain. Wash and cut apples into 1/4 inch slices. Mix with onions. Lightly brown sausage. When brown, add croutons.

Arrange half of the onion-apple mixture in a 2 quart casserole. Sprinkle with half mixture of brown sugar, salt and nutmeg. Cover with sausage. Add remaining onion mixture and sprinkle with remaining sugar. Drizzle lemon juice over finished casserole.

Bake at 350 degrees for 25 minutes covered. Uncover and bake 15 to 20 minutes longer, until apples are tender.
