GOURMET POTATOES 
6 med. potatoes, cooked in jackets
2 c. Cheddar cheese
1/4 c. butter (butter)
1 1/2 c. sour cream (room temp.)
1/3 c. grated onion (green or reg.)
1 tsp. salt
2 tbsp. butter (butter)

Peel potatoes and grate coarsely. Combine cheese and 1/4 cup butter in saucepan. Stir until almost melted. Remove from heat. Blend in sour cream, onions and salt. Fold in potatoes. Turn into greased 2 quart casserole dish and dot with 2 tablespoons butter. Bake uncovered of 25 minutes at 350 degrees.
