SQUASH CASSEROLE 
2 lbs. yellow squash chopped
1 med. onion, chopped
1 (7 oz.) pkg. seasoned stuffing
1 stick butter, melted
2 cans cream of chicken soup
1 c. sour cream

Preheat oven to 350 degrees. Cover squash and onion with water and salt to taste. Simmer for 10 minutes, drain, set aside. Mix stuffing and melted butter in bowl. Spread 3/4 stuffing on bottom of 11 x 13 pan. Mix chicken soup and sour cream in bowl. Fold soup mixture into squash. Pour soup and squash mixture on top of stuffing in pan and cover this with remaining stuffing. Bake at 350 degrees for 20 to 25 minutes.
