BUSTER'S CILANTRO & LIME BBQ
CHICKEN
 
The best barbecue chicken ever!!

chicken wings or thighs
extra virgin olive oil (EVOO)
1 fresh lime, divided
diced garlic
1/2 (16 oz.) bottle Sweet Baby Ray's barbecue sauce
2/3 bunch cilantro, finely chopped
salt and pepper, to taste

Peel any skin off of the thighs/wings (if desired). Toss chicken in a large bowl, coating it with extra virgin olive oil and the juice from half a lime. Season with salt and pepper.

Preheat barbecue and place chicken on hot barbecue at 350°F for 15 to 18 minutes per side.

While chicken is cooking, pour 1 tablespoon olive oil in pan, and quickly pan fry diced garlic until just golden brown.

In a separate bowl, combine half bottle of Sweet Baby Ray's barbecue sauce, 2/3 bunch finely chopped cilantro, prepared garlic, and the juice from the other half of the lime. Mix well.

After 15 minutes of cooking on each side, brush barbecue sauce mixture top side of chicken. Let cook for an additional 5 minutes. Flip chicken, brush sauce on, and cook for 5 minutes.

Remove and enjoy!
