ALABAMA BISCUITS 
4 c. flour
4 tsp. baking powder
2 tsp. salt
4 tsp. sugar
1/2 c. nonfat powdered dry milk
2 c. warm water
2 pkg. dry yeast
1/4 c. Crisco
1/2 lb. butter

Mix dry yeast in warm water and let stand for 30 seconds. Add shortening and allow to melt. Mix together baking powder, salt and sugar. Mix dry milk with the flour, then add to baking powder mixture. Add liquids and mix thoroughly. Let rise until double (45 minutes). Punch with fork and let rise again. Turn on floured board, butter hands and knead enough to handle. Roll dough about as high as biscuit cutter. Cut into biscuits, place on greased baking sheet and let rise until doubled. Brush with butter and bake at 400 degrees for 15 to 20 minutes.

PROPORTIONS FOR 150 SERVINGS:

6 qts. flour
1 c. baking powder
6 tsp. salt
1 1/2 c. sugar
Butter
3 c. nonfat dry milk
12 c. warm water
12 tbsp. dry yeast
1 1/2 c. shortening
