ALABAMA CHICKEN | |
1 can water chestnuts 1 can cream of mushroom soup 1 (8 oz.) carton sour cream 1 can sliced mushrooms 6 chicken breasts 1 (8 oz.) box Escort crackers 1 can cream of chicken soup 1 cube butter 1 sm. onion, chopped finely Cook chicken in unsalted water. Skin, bone and cube into bite-sized pieces. Crumble 2 packages of the crackers in bottom of buttered casserole dish. Dot with half the butter. Add the chicken layer, water chestnuts, and mushrooms. Mix soups, sour cream and onion in small bowl and pour over contents of casserole. Crumble 2 packages of crackers on top. Dot with the rest of the butter. Bake at 350 degrees until bubbly throughout the dish, about 30-35 minutes. |
