SARAH'S FAST & EASY BONELESS CHICKEN | |
This can be made for 1 person or 101 with or without onions and is great for those nights when you are running out of time and ideas! I use a non-stick skillet, so if you don't, adjust the amount of oil according. Also, you might want to cover the pan with a splatter screen while cooking. boneless, skinless chicken breasts, trimmed, washed & dried (enough for each person) olive oil seasonings, to taste (I like a little seasoned salt, hickory salt and garlic powder) chopped onion (I prefer fresh but dried works too with slightly different results) Put enough oil in the pan so as to slightly coat one side of each piece of chicken. Heat pan over medium to medium low heat. Season one side of chicken and place in hot pan (seasoned side down) and season the other side. When cooked halfway through (amount of time will depend on how big and/or thick the chicken is) turn and add enough onions around the chicken for each person. Add just enough oil to coat the onions. Cook and stir the onions until the chicken is done. Serve with a vegetable and starch such as steamed broccoli, quick cooking wild rice and perhaps some dinner rolls from the freezer for a fast, delicious dinner. Enjoy!
