GREEN PEPPER CASSEROLE 
4 c. green pepper, chopped
2 c. boiling water
1 med. onion, chopped
2 eggs, beaten well
1 c. mayonnaise
1 c. grated Parmesan cheese

Boil the chopped peppers three minutes and drain. Combine remaining ingredients and add the peppers. Salt and pepper to taste. Place in greased 8"x8" baking dish and top with 1 tablespoon butter, melted and 2 tablespoons bread crumbs. Bake 30 minutes at 350 degrees.
