APPLE WALNUT CAKE | |
4 c. coarsely chopped apples 2 c. sugar 2 eggs 1/2 c. vegetable oil 2 tsp. vanilla 1 tsp. salt 2 tsp. baking soda 2 tsp. cinnamon 1 c. chopped walnuts 2 c. sifted all purpose flour Combine apples and sugar and let stand. Beat eggs slightly, beat in oil and vanilla. Mix and sift flour, baking soda, cinnamon and salt; stir alternately with apples and sugar mixture. Stir in walnuts, pour in greased pan, bake at 350 degrees for 1 hour or until cake tests done. You may use a butter frosting or: LEMON BUTTER FROSTING FOR CAKE: 4 tbsp. butter 3 c. confectioners sugar Few grains salt 2 tbsp. lemon juice 1 or tbsp. cold water Cream butter, add sugar, gradually creaming thoroughly; beat in juice and enough cold water to make spreading consistency; beat in salt and spread on cake. |
