CANTALOUPE PIE 
1/4 c. flour
1 lg. ripe cantaloupe
3/4 c. sugar
3 eggs, separated
2 tbsp. butter
1 (8 or 9 inch baked pie shell)
Enough meringue to cover pie

Dice melon into pan. Mix 1/2 cup sugar in with melon and cook until tender and soft. Mash; set aside. Mix flour and remaining sugar. Add butter and beaten egg yolks. Mix in melon. Pour into baked pie shell and cover with meringue. Brown in oven at 325 degrees for 10-12 minutes.
