SAUTEED SQUASH 
3 sm. to med. zucchini
3 sm. to med. yellow squash
1/2 med. onion
4 tbsp. olive oil
Salt
Pepper
Lemon juice (optional)

Cut squash into large cubes. Place in colander and salt heavily. Leave to drain for 1/2 hour. Rinse salt off squash.

Heat oil and minced onion in pan. Add squash, salt and pepper. Stir occasionally. Cook about twenty minutes until squash is soft. Lemon juice may be added.

By salting the squash the bitterness is removed and the squash takes on a sweetness.
