Vegetable cooking spray 1 lg. clove garlic, minced 1 sm. onion, sliced and separated 1 sm. green pepper, chopped 2 med. size yellow squash, sliced 2 med. zucchini, sliced 2 sm. tomatoes, peeled and chopped 1/4 tsp. dried whole basil Coat a large skillet with cooking spray; place over medium heat until hot. Add garlic and onion; cook until onion is transparent, stirring constantly. Add green pepper; cook for 5 minutes, stirring constantly. Add yellow squash and zucchini; cover and cook for 5 minutes. Stir in tomatoes, basil and pepper; cover and cook about 10 to 15 minutes. Yield: 4 servings (about 55 calories per 3/4 cup serving.) |
