STUFFED BREAST OF VEAL 
5 lbs. breast of veal with pocket

Season meat with the following:

1/2 tsp. pepper
1 tsp. paprika
1/2 tsp. garlic powder

After meat cooks about 1 hour, drain fat off and then fill pocket with stuffing.

POTATO STUFFING:

2 c. grated potatoes
1/2 c. minced onion
4 tbsp. potato flour
1 egg
Salt and pepper to taste

Mix and stuff. Roast in a 325 degree oven for 3 hours or until meat is tender. Baste frequently and add a little water if pan becomes dry.
