YUMMY MASHED POTATOES 
My family was skeptical the first time I tried this recipe with them, now I can't make mashed potatoes any other way and I often have to double the batch!

5 to 8 red potatoes, peeled, quartered and boiled
salt and pepper
1/4 cup (1/2 stick) butter
1/2 cup milk
1 egg
1/2 cup cottage cheese
1/2 cup dairy sour cream
1/4 cup chopped green onion
1/2 cup Parmesan cheese

Preheat oven to 350°F.

On top of stove, boil and mash potatoes with salt, pepper, butter and milk as you normally would.

After potatoes are mashed, mix in egg, cottage cheese, sour cream and green onion. Blend until well-mixed.

Pour in 13x9-inch glass baking dish, sprinkle Parmesan cheese over the top. Bake at 350°F for 30 minutes or until browned around the edges. Enjoy!
