COLD CUCUMBER SOUP WITH MASHED
POTATO
 
CUCUMBER SOUP:

4 to 6 large cucumbers, peeled and sliced
1 small red onion, or equivalent chives, chopped
1 pint dairy sour cream
2 to 3 tsp. red wine vinegar

MASHED POTATOES:

3 to 4 lb. white potatoes
1/2 lb. crispy fried bacon, diced (8 slices)
1 medium white onion, chopped and fried til golden

Combine all the ingredients for the soup and set aside in the refrigerator as you prepare the mashed potato.

Meanwhile, peel, boil and mash the potatoes. Add in the bacon and onions.

To serve, place the soup into bowls and add a generous dollop of potatoes in the middle of the bowl. Some people like to mix the two together completely, but I like to take a little soup and a little potato for the contrast.
