EASY BORSCH 
2 c. sour cream
Juice of 1/2 lemon
1 tsp. salt
1 stalk celery, chopped
1/2 onion, chopped
1 c. cooked diced beets

Put 1 3/4 cups sour cream in blender. Add remaining ingredients and puree until smooth. Serve cold with remaining sour cream.
