RINDS ROULADEN 
4 slices beef (bottom round), 1/4-inch thick
1 onion
4 slices bacon
2 dill pickles
Mustard
Salt and pepper
Flour

Pound meat with meat mallet until thin. Sprinkle with salt and pepper. Put thin layer of mustard on meat. Cut onion into strips; cut bacon and sprinkle evenly over 4 slices. Cut pickles into spears; put on meat.

Start rolling meat, starting with small side. Make sure you roll really tight and all ingredients stay inside. Fasten with toothpick or meat pick. Sprinkle with flour and brown on all sides in hot fat.

Put meat in casserole; fill with meat broth or bouillon. Cook in 300 degree oven, covered, for 1 hour. Make gravy by adding some flour mixed with a little cold water. Simmer a few minutes. Taste for seasoning. You can add some ketchup, paprika, or sour cream to gravy. Serve with boiled potatoes.
