SPINACH AND TOFU LASAGNE 
15 oz. Ricotta cheese
10 oz. frozen spinach, thawed and drained
1 egg
1 lb. tofu, drained
30 oz. jar spaghetti sauce
1/2 lb. lasagna noodles, cooked
1/2 lb. Mozzarella cheese, shredded
1/2 c. Parmesan cheese

Mix together Ricotta cheese, spinach, egg and tofu. Layer 9x13 casserole dish with spaghetti sauce, noodles, tofu mixture and Mozzarella cheese. Repeat layers ending with spaghetti sauce. Top with Parmesan cheese. Bake at 375 degrees for 30 minutes.
