STAMBURG CRANBERRY RELISH 
1 bag fresh cranberries, rinsed
1 sm. onion, chopped
2 med. carrots, finely grated
1/2 c. sour cream (more if desired)
1 1/2 tbsp. horseradish
1/3 c. sugar (more if desired)
1/2 c. raisins, steamed lightly & chopped
1/2 c. walnuts

Chop together cranberries and onion in processor or blender. Add finely grated carrots. Stir in the rest of the ingredients. Refrigerate overnight then taste and adjust sour cream, horseradish or sugar if desired. Freezes well.
