SPINACH WITH RAISINS AND PINE
NUTS
 
1/2 c. golden raisins, plumped
1/3 c. olive oil
5 garlic cloves
3 bunches fresh spinach or 3 frozen
1/3 c. pine nuts, browned

Cover raisins with hot water and soak 10 minutes. Drain. Heat oil over medium heat. Add garlic and saute until golden, 4 minutes. Discard garlic. Increase heat and add spinach. Cover and cook, stirring occasionally until wilted. (Careful not to burn.) Uncover. Add salt, pepper, pine nuts and raisins. Cook until cooking liquid evaporated, 4-5 minutes. Can be served at room temperature.
