3 lg. peeled cucumbers, diced
1 c. finely sliced celery
1 sm. bunch parsley, minced
1 c. coarsely chopped olives
2 c. shredded raw spinach
1 c. pine nuts

Mix all together and add dressing just before serving.

DRESSING:

2 parts olive oil
1 part wine vinegar
Pepper
Pinch of oregano
Salt to taste
