HATTERAS CORN BREAD 
1/3 c. vegetable oil
2 c. white corn meal
3/4 c. flour
2 tsp. salt
3/4 c. sugar
5 c. boiling water
1 (13 oz.) can evaporated milk
2 tsp. baking powder
3 eggs

Grease 8x8 baking dish and put in cold oven. Preheat oven to 400 degrees with greased pan inside. In a large bowl combine cornmeal, flour, salt, and sugar. Pour in boiling water and mix well. Add evaporated milk, baking powder, and eggs, one at a time, mixing with wire whisk. Mix well until free of lumps. Remove pan from oven and pour in mixture. It will sizzle and oil will rise to top. Bake 55 to 60 minutes. Bread will be crunchy on top and soft inside. Cool 5 minutes.
