CHICKEN - FRIED STEAK WITH CREAM
GRAVY
 
1 lb. beef top round steak, cut about 1/2 inch thick
Flour
3 tbsp. salad oil
1/2 c. water
1 c. milk
1 tsp. salt
1/8 tsp. pepper
3 c. hot, mashed potatoes

On cutting board, coat steak with about 3 tablespoons flour. With meat mallet or dull edge of knife, pound both sides of meat well. Cut into 4 pieces. In skillet over medium heat, fry steaks in hot oil 3 to 5 minutes each side until well browned. Remove and keep warm. Mix water with flour (use flour left from meat - more if needed - 2 tablespoons). Gradually stir in flour mixture to drippings in skillet, stirring and scraping bottom of pan. Stir in milk, salt, and pepper. Stir constantly until thickened. Serve meat and gravy with mashed potatoes. Serves 4.
