SPICY DEEP FRIED SOUTHERN
CATFISH
 
catfish fillets
salt and pepper, to taste
4 cups all-purpose flour
1 cup cornmeal
oil (for frying)

Preheat oil to 350°F. Sprinkle both sides of catfish with seasoning.

In a separate bowl, combine the flour and the cornmeal. Dredge the fillets in the flour mixture and place in the hot oil. Deep-fry for 7 to 8 minutes, until done. Drain onto paper towels.

Note: If you like your fish with more seasonings, you can add it to the flour mixture. You can add steak seasoning for a very spicy taste.
