BLACK AND WHITE BEAN SALAD 
1 (16 oz.) can cannelloni beans
1 (16 oz.) can black beans
1/2 small red onion, chopped
1/2 tsp. salt
1/4 c. chopped parsley
1/4 c. olive oil
2 1/2 tbsp. red wine vinegar
1/4 tsp. pepper

Rinse and drain beans. Toss all ingredients together. Serve at room temperature or chilled. Rice may be added to salad to make a complete meal.
