RENEE'S CHOCOLATE CHIP ZUCCHINI
BREAD
 
1 c. grated zucchini, drained well
1 c. sugar
1 egg
1/2 c. cooking oil
1/4 tsp. grated lemon peel
1 1/2 c. flour
1/4 tsp. baking powder
1/2 tsp. nutmeg
1 tsp. cinnamon
1/2 tsp. salt
1/2 tsp. baking soda
1 c. chocolate chips
1/2 c. chopped nuts, optional

Beat together zucchini, sugar and egg. Add oil - mix well. Add lemon peel.

Sift together all dry ingredients. Blend into batter. Fold in chocolate chips and nuts. Pour into a greased loaf pan. Bake 325 degrees until done, 60-65 minutes.

Cool in pan on a rack for 10 minutes then remove from pan. Cool thoroughly. Wrap and store overnight before slicing for best results. Makes 1 loaf.
