COTTAGE CHEESE PANCAKES 
2 eggs
2 c. milk
1 1/2 c. cottage cheese
1 c. all-purpose flour
1/2 c. whole wheat flour
1 tsp. salt
4 tsp. sugar
1 tsp. cinnamon
2 tbsp. oil

Break the eggs and combine them with milk. Add cottage cheese, flours, spices and oil. With this amount of flour pancakes become quite thin. Use more flour if you want them thick. Blend thoroughly. Pour batter on hot, greased griddle or lightly greased skillet. Turn when edges browned. Delicious with fresh berries or applesauce.
