LACY'S COTTAGE CHEESE PANCAKES 
3 eggs
1/4 c. fructose
1/4 tsp. sea salt
1 c. Alta Dena cottage cheese
1/4 c. milk
1 c. unbleached flour
2 tbsp. butter, melted

Beat the eggs with fructose and salt. Add cottage cheese, milk and beat well. Gradually add flour and beat until smooth. Stir in melted butter. Pour spoonsful on greased griddle. Turn when lightly browned and brown on other side. Serve with hot syrup. Makes 12 pancakes.
