COTTAGE CHEESE PANCAKES 
4 eggs, separated
1 c. fine curd cottage cheese
1/4 tsp. salt
1/4 c. flour

Beat egg whites stiff, beat egg yolks until light, add the cottage cheese, flour, and salt, and mix well. Fold in egg whites, bake on a well greased griddle until brown on both sides. Make pancakes smaller than usual, they are a little delicate to handle.
