RED VELVET CAKE 
2 1/2 c. plain flour
2 c. sugar
1 c. buttermilk
2 c. Wesson oil
1 tsp. baking soda
1 tsp. salt
1 tsp. cocoa
1 tsp. vanilla
1 lg. bottle red food coloring
2 eggs

Cream eggs and sugar together. Sift dry goods together. Add to sugar mixture. Alternating oil, milk and dry goods. Pour into 8" or 9" round cake pans and bake at 350 degrees for 35 minutes. Not suitable for 9"x12" cake.

ICING:

1 stick butter
8 oz. cream cheese, softened
1 lb. powdered sugar
1 tsp. vanilla
1 c. pecans, chopped
