RED VELVET CAKE 
2 c. Wesson oil
1 1/2 c. sugar
2 eggs
1 c. buttermilk
2 1/2 c. plain flour
1 tsp. vinegar
2 tsp. cocoa
1 tsp. salt
1 tsp. baking soda
1 tsp. vanilla
2 (1 oz.) bottles red food coloring

Mix all ingredients well. Pour into 3 well greased round cake pans. Bake at 350 degrees for about 30 minutes or until you can insert toothpick into cake and it comes out clean.

ICING:

1 box powdered 10X sugar (sifted)
1 stick butter, softened at room temperature
1 pkg. cream cheese, softened at room temperature
1 tsp. vanilla
1 1/2-2 c. chopped nuts

Mix well. Spread between layers and top and sides of cake after it is cooled.
