SHEENA'S RED VELVET CAKE 
1 1/2 c. sugar
1/2 c. butter
2 eggs
2 tbsp. cocoa
1 tsp. vanilla
1 tbsp. vinegar
1 c. buttermilk
1 tsp. baking soda
2 1/2 c. cake flour
1/2 c. red food coloring

Cream sugar and butter. Add eggs and beat well. Combine food coloring, cocoa and vanilla. Add to mixture. Mix buttermilk, vinegar and soda. Add alternately cup flour to batter. Pour into 2 (9 inch) pans. Bake at 350 degrees for 25-30 minutes. Cool thoroughly.

FROSTING:

1 box confectioners sugar
1 (8 oz.) cream cheese

Blend together sugar and cheese. Frost each cake layer.
