MARY'S LEMON PIE 
CRUST:

1 c. unprocessed bran
2 packets Equal
1 egg
1/4 c. water

Mix ingredients together in bowl. Press into 9" pie plate. Bake at 350 degrees for 10 to 15 minutes. Cool for at least 30 to 40 minutes until ready to fill.

FILLING:

1 tbsp. grated lemon peel
1/2 c. lemon juice
1/2 c. water
1 env. Knox unflavored gelatin
18 packets Equal
4 eggs, separated

Mix gelatin and 12 packets Equal in saucepan. Beat egg yolks, water, and juice in separate bowl. Add egg mixture to gelatin mixture. Heat over low flame until gelatin is dissolved (about 5 minutes). Stir frequently. Add lemon peel. Pour into large bowl and chill, stirring occasionally, until mixture mounds slightly. Beat egg whites until soft peaks form. Add 6 packets Equal and beat until stiff. Fold into gelatin mixture. Turn into the crust. Chill until firm. Yield: 8 servings. Each serving = daily bran allowance and 1/2 ounce protein.
