SPICY PRUNE CAKE | |
1 1/2 c. sugar 1 c. cooking oil 3 eggs 1 tsp. vanilla 1 1/2 - 2 tsp. butter flavor 2 c. sifted flour 1/2 c. buttermilk 1 tsp. cinnamon 1/2 tsp. nutmeg 1/2 tsp. allspice 1 tsp. baking soda 1/2 tsp. salt 1 c. cooked prunes, mashed Mix sugar with oil. Add eggs, one at a time, beating after each egg. Add flavorings. Sift soda and spices with flour. Add dry ingredients to sugar, egg mixture alternately with buttermilk, beginning and ending with flour mixture. Add prunes and beat. Grease and flour large rectangular glass pan. Bake at 350 degrees until done, about 40 minutes. Let cake remain in glass pan. TOPPING: 1 c. sugar 1 stick butter 1/2 c. buttermilk 1/2 tsp. baking soda Mix in pan, bring to boil, pour over cake while both are hot. It helps to punch holes in cake, also to lift edges of cake and let syrup run under them. This is a rich, moist fruity tasting cake that will not go begging. |
