LO CAL SPICY CHEESECAKE | |
1 container (16 oz.) low-fat cottage cheese 2 eggs 4 tbsp. instant nonfat dry milk powder 1 tsp. vanilla 1/2 tsp. grated lemon rind 2 egg whites 1/4 tsp. cream of tartar 1 c. cinnamon "sugar", recipe below Plum, for garnish, optional Spray bottom and side of 8 inch springform pan with vegetable spray. preheat oven to 350 degrees. Combine cottage cheese, eggs, 2 tablespoons of the milk powder, the vanilla and lemon rind in blender; cover. Whirl until smooth, scraping down sides as necessary. Beat egg whites with cream of tartar in medium bowl until foamy. Gradually beat in remaining 2 tablespoons of milk powder. Continue beating until soft peaks form. Fold egg whites into cheese mixture until no streaks of white remain. Pour mixture into prepared pan. Bake in preheated oven for 35 minutes or until top is browned and a wooden toothpick comes out clean when inserted into the center. Top with cinnamon "sugar" and sliced plum, if desired." Makes 8 servings. Cinnamon "Sugar": Combine cinnamon and an artificial sweetener in a proportion of 2 teaspoons cinnamon to 6 packets of sweetener, enough to make 1 cup. |
