SAUSAGE BALLS 
3 c. biscuit mix
1 lb. hot pork sausage, at room temperature
10 oz. sharp Cheddar cheese

Crumble the sausage and mix with cheese. Add biscuit mix one cup at a time. Form into small balls, about 1 inch in diameter, and place on an ungreased cookie sheet. Bake in a preheated 350 to 375 degree oven until light brown, 13- 15 minutes.

These can be prepared in advance and frozen, uncooked. When you're ready to enjoy them, just pop them in the oven and cook. It may take a few extra minutes when they are frozen. Serve warm. Makes about 7 dozen.
