CHOCOLATE BAR CAKE | |
1 cup chocolate chips 1/2 cup peanut butter (your choice) 1 1/2 cups confectioners' sugar 1 tbsp. butter 1/4 tsp. salt 2 tsp. instant coffee 1/3 cup boiling water 1 egg 1 tsp. vanilla 8 oz. saltine crackers, crushed into small crumbs (two sleeves) Combine chocolate chips, peanut butter, confectioners' sugar, butter and salt in a pot over low heat to melt. Before it is completely melted, take off heat. It will continue to melt. Add instant coffee to boiling water. Add coffee to the chocolate mixture. Remove from heat, let cool slightly. Stir in egg, vanilla and crushed saltines. Press mixture into a waxed paper lined pan and place in refrigerator overnight. Note: Can top with chocolate buttercream icing and sprinkle shredded coconut on top. Slice into 1/2-inch thick slices and enjoy! Submitted by: Sheila G. |
