BARLEY-OAT CHOCOLATE CHIP BARS | |
1/2 cup brown sugar 1 cup whole wheat flour 1 cup regular rolled oats 1/2 cup barley flour 1/2 cup oat bran 1/4 cup wheat bran 3 tbsp. nonfat dry milk powder 2 tbsp. ground cinnamon 6 tbsp. ground flax 1 1/2 tsp. baking powder 1/4 tsp. baking soda 6 tbsp. water 3/4 cup honey 1/4 cup olive oil 1 tsp. vanilla extract 2 cups semi-sweet chocolate morsels 1 cup chopped walnuts 1 cup unsweetened shredded coconut flakes Preheat oven to 350°F. In a large bowl, stir together brown sugar, flaxseed, whole wheat flour, oats, barley flour, oat bran, wheat bran, dry milk powder, cinnamon, flaxseed, baking powder and baking soda. Add water, honey, oil and vanilla. Stir in chocolate morsels, walnuts and coconut flakes. Line a 12x17-inch cookie pan with parchment paper. Place dough on tray. Use a small rolling pin to spread dough to fill pan (a sheet of waxed paper may make it easier). Bake at 350°F for 20 minutes. Remove from oven and let sit for 5 minutes. Slide parchment paper onto counter and cut bars to desired size with a pizza cutter. Transfer to wire rack and let cool. Submitted by: Dale McGinnis |
