FROSTED CHEWY OATMEAL BARS 
Oatmeal Bars:

1/2 cup brown sugar
1/3 cup butter
2 tbsp. light corn syrup
1/8 tsp. salt
2 tbsp. peanut butter
1/2 tsp. vanilla extract
1 3/4 cups quick-cooking oats

Frosting:

1 cup semisweet chocolate chips
1/2 cup butterscotch chips
1/3 cup peanut butter

Oatmeal Bars:

Line a 9x9-inch square pan with foil. Preheat oven to 350 degrees Fahrenheit. In a medium saucepan over low heat, melt brown sugar, butter, light corn syrup, and salt. Remove from heat. Stir in peanut butter and vanilla extract until smooth. Stir in oats until coated completely.

Press in an even layer into the prepared pan. Bake for 10-12 minutes or until edges are lightly browned. Remove from oven and set pan on a cooling rack.

Prepare frosting (see below). Frost while warm. Cool completely. Remove foil from large bar. Cut into bite-sized bars.

*Cooks Note* - Can use chunky peanut butter in place of the creamy peanut butter and can sprinkle chopped peanuts on top of the frosting after spreading it into an even layer.

Frosting:

In a small saucepan over low heat or using a double-boiler, melt the semisweet chocolate chips and the butterscotch chips. Stir until smooth and all of the chips have melted completely. Remove from heat. Stir in the peanut butter until it is completely combined.

Now you can pour over the warm oatmeal bars, and spread in an even layer (I usually use the back of a spoon to spread it in an even layer).
