SWEET - SOUR RED CABBAGE 
1 med. head red cabbage
2 apples, not peeled but sliced and cored
1 onion, sliced

Simmer with 1 quart water, 1/2 cup vinegar, 1/2 cup sugar, and 2 teaspoons salt. Add a cheese cloth bag of: 5 peppercorns 1 bay leaf 5 whole allspice or a pinch of ground

Simmer 45 minutes or until done. Add 1 tablespoon bacon fat the last 15 minutes of cooking. Serves 8 to 10.
