GRANDMA'S POTATO ROLLS 
1 pkg. or 1 cake dry yeast
1/4 c. water (warm) to dissolve yeast
1/2 c. mashed potatoes
1/4 c. shortening
1/4 c. sugar
1 1/2 tsp. salt
1 c. milk (scalded)
1 egg
4 to 4 1/2 c. sifted flour

Dissolve yeast in warm water. Combine potatoes, shortening, salt, sugar, and hot milk. Cool to luke warm. Add yeast and eggs. Stir in 2 cups flour and beat well. Stir in flour to make soft dough.

Knead on floured surface 6-8 minutes. Place in greased bowl, turning once to grease surface. Cover and let double about 1 hour in a warm place, then punch down and shape into balls.

Let rest 10 minutes. Shape, place on cookie sheet, let rise 1 hour. Bake at 400 degrees for 10 minutes. Yield: 2 dozen.
