GRANDMA'S POTATO PANCAKES 
3 c. cubed potatoes
3 eggs
1/2 c. flour
2 tsp. baking powder
1 tsp. salt
1/4 c. shortening (butter is best)

Put potatoes and eggs in blender. Blend until finely chopped. Pour into dry ingredients. Mix until blended together evenly. Add melted butter. This amount should serve 4 hungry adults. If more are needed, make another batch. Don't make ahead as potatoes will darken. Fry on 375 degree griddle.
